Happy #LaborDay my people!! Today, we celebrate the social and economical achievements of American workers. Praise to those out there getting up and getting after it, day in and day out. I see you, and I respect your drive and dedication!
Today I'm making September's #recipeofthemonth -- Stuffed Bell Peppers! Feel free to stuff these any way you please (Mexican, Greek, Cajun etc.)
Step 1. Prep and roast the peppers
cut the peppers in half vertically and remove the seeds
place upright on a baking sheet and roast at 350 degrees for 15-20 minutes
Step 2. Prep the filling
cook lean ground meat, onions, garlic, and seasonings in a saucepan
add in any other veggies or herbs (carrots, spinach, corn, tomatoes, avocados, cilantro, parsley etc.)
mix in cooked brown rice or quinoa
Step 3. Fill peppers and bake at 400 degrees for ~10 minutes
Step 4. Share with a hardworking friend & enjoy
